With the holiday season over, I’m still craving sweets but at the same time want to slim down again. (Let’s not even talk about the 5 lbs. I’ve gained over Christmas time!) Protein balls aka energy bites are a wonderful way to fulfill the sweet cravings, as well as fill up relatively quickly in a healthy manner.
There are many different protein balls/energy bites recipes out there, and I have many more to share, but these are my current favourites! They’re made of few ingredients, are easy to make and take a max of 5 mins to create. And I’m guilty of having those times when I just simply can’t wait 30 mins for something to cook. So these beauties are perfect!
Vanilla Cranberry Energy Bites
(gluten-free, dairy-free, can be made vegan)
Ingredients:
3/4 cup gluten-free rolled oats
3/4 cup nut or seed butter
3/4 cup Shaklee Vanilla Life Shake
1/3 cup unsweetened coconut
1/3 cup honey (or if vegan, maple syrup or agave nectar, coconut nectar might also work)
1/3 cup dried cranberries
Put all ingredients into a mixing bowl and mix well. (I do this by hand, because it makes it easier to incorporate all ingredients.) Once fully incorporated, either use an ice cream scoop to scoop the “batter” onto a plate, or use your hands to roll into balls. Voila! Enjoy 🙂
Side Note: These freeze well! So if you want to meal prep for the upcoming week, just pop these into the freezer or fridge!
