Yesterday I ate 10 protein bites. It wasn’t exactly ideal, especially considering how stuffed I was, but they certainly were worth it! Cranberries and pumpkin work so well together! I’m not a huge fan of pumpkin, but this worked perfectly. They generally had me thinking pumpkin cranberry cookies, scones, etc…my mind just goes to all sorts of places in food land! Next time I’ll be trying chocolate chips instead of cranberries, for a dessert-like treat.

Pumpkin Cranberry Protein Bites
(df, gf, vegetarian)
Makes approx. 18 protein bites
Ingredients:
- 3 scoops Shaklee Vanilla Life Shake
- 1/2 cup almond butter
- 1/4 cup honey
- 2 tbsp. pumpkin puree
- 2 tbsp. dried cranberries
- 1/2 tsp. pumpkin pie spice
Directions:
Put all ingredients into a bowl and mix well. Using a teaspoon, measure out “dough” and form into balls. Put into freezer in order to firm up, or eat straight away (I’ve done this several times). Enjoy 2-3 as a snack for school or on the go!
