So Blogtober hit a bit of a speed bump. My computer started acting up, and my mouse went everywhere but where I wanted to. Trying to get this fixed took a while, but I’m back and will of course post all of the fall-themed content I had planned for Blogtober! So here goes!
One of my favorite things to eat when it’s getting cold outside and I want to have something grain-based, is a hot bowl of oatmeal. Since I’m often not that hungry in the morning though, these breakfast cookies are the perfect addition to your fall meals, full of protein, pumpkin flavor and goodness. These are also great for snacks for school or even as a dessert to have with a pumpkin spice latte or a warm cup of tea! Added bonus: they’re so easy to make and take basically no time at all! If you have children or younger siblings, they’re so simple that they can easily help or even do it all by themselves.

Pumpkin Cranberry Breakfast Cookies
Makes approx. 9 cookies
(df, gf, vegan)
Ingredients:
1 c. oats
1 banana, mashed
1/3 c. pumpkin puree
1 scoop Pumpkin Spice Life Shake
2 tbsp. dried cranberries
2 tbsp. raw walnut pieces
Dash of sea salt
Pumpkin Pie Spice
Preheat oven to 350 degrees. Line a baking sheet with parchment paper. Mix all ingredients in a bowl. Drop one tablespoon of batter onto the baking sheet, and use fingers to flatten. Bake for 15-20 mins.
