It is summer, and summer means lemonade, which means I’m eating anything and everything related to lemons. Honestly I’ve been contemplating fixing a lemon poundcake, but so far the reasonable side of me has won that debate. Instead I’ve been playing around with healthier recipes. As always, I like to incorporate anything that has added nutritional value – so what better than protein and chia seeds? So on the top of my list was a summery lemon chia pudding recipe!
While I’m a huge fan of trying new hip and trendy health-oriented cafes and restaurants, those can quickly add up and making your own chia pudding is definitely more affordable and just plain more fun! I’m currently licking the spoon that’s been used to portion out the chia pudding (otherwise fights would break out), and I’m so excited to share this recipe with you!
Side note: My brother has been pacing around the kitchen, waiting for me to finish up so he can get first dibs on the pudding – joke’s on him though since I already had mine!
Anyway, he’s giving me the stink eye now, so I better hurry up!

Lemon Chia Pudding Recipe:
Ingredients:
1 cup unsweetened non-dairy milk
2 scoops Shaklee Vanilla Life Shake
1/4 cup chia seeds
1 tbsp. honey
Juice of 1 lemon
1/2 tsp. vanilla extract
Directions:
Blend all ingredients except chia seeds. Transfer into a shaker cup. Add chia seeds and shake until evenly distributed. Set in fridge until pudding-like consistency. Serve and enjoy!
